The first thing you gotta do is pick 'em...very carefully. I prefer to use the leather, or suede work gloves, and a small pruning shear or sharp knife. Cut them about four inches from the top; they'll regenerate and grow a new crop for you. Avoid the ones which have started to flower, as the leaves will be tougher, and have a sharper taste.
Now, you can snip each individual leaf off, or just chop them up, stems and all. The stems have a stringy, hemplike fiber (like celery), but cut short they are unnoticeable when cooked. Rinse them to remove anything foreign, such as dirt, critters, etc. Put the nettles in simmering water.
If you plan on having them in a salad, then about two minutes should do it. A simple taste test will tell you...if your lips don't sting, they're OK.
For cooked nettles, I like them with some chopped up carrot, onion, salt and pepper. Since carrots and onions take a bit longer to cook, I don't add the nettles until the last ten minutes.

To be honest when he brought the nettles into the kitchen, I thought omg, I'm dreading this, I was baking at the times, and I was watching very closely what they looked like when they cooked. They didn't smell very good when they were cooking, so I was kind of nervous to try them out.

When it was time to actually taste them, instead of just dumping them on my plate and ruining the rest of the food, I sampled a little beforehand, I was amazed, they actually tasted very good. Great with the carrots, my daughter ventured into the kitchen and I asked her to try some. I half expected to get the scrumpled up face, saying urghhhh!, infact she liked them too.

So, they were served up with our lovely roast chicken and I didn't even think of nettles whilst eating them, probably looked on them as cabbage in a weird way.

Summary, well I didn't get stung when I ate them, so no worries there, and I'm still living so I didn't get poisoned. I would definately have nettles again.
